I meant to post about this challenge yesterday, but I am hoping to stick to a posting-every-other-day schedule during the school year (if I can!). Today's challenge is to do at least a month of Meatless Mondays!
I thought of this challenge during my trip to Guatemala. My roommate on the trip wasn't a vegetarian, but she generally chose not to eat meat for a couple of different reasons. First of all, eating a lot of meat can be unhealthy. Cutting a little bit of meat from your diet can reduce your risk of cancer, diabetes, and obesity.
If you won't do it for yourself, do it for the planet! The production of meat is not environmentally friendly. Raising livestock creates greenhouse gases, and also uses a lot of water and fossil fuels. Cutting out meat from your diet is one of many ways you can reduce your carbon footprint.
I am a huge fan of meat! It's a good source of protein, and delicious! However, I must admit that everything is better in moderation. I am definitely going to do Meatless Mondays for the rest of the month, if not all year!
